Don't get me wrong, I understand what fiat money is, but what should they have done?
Asked their dealers to only accept credit cards, cheques or wire? Taken all of their cash to the bank?

BTW they did buy property overseas after laundering what they could.
When you have that kind of cash, you can do anything. That includes moving it out of the country and laundering it. The reason is that most people do not understand what fiat money is, and will gladly take paper. In exchange for paper, they will do just about anything at all.
