I have some domains making good coin right now but they contain trademarks.

Can I protect myself by moving them to an offshore registrar? Should I get an offshore host as well?

Any recommendations are greatly appreciated!!

offshore hosts is fine. However if your domain get's frozen or is out of your control then hosting it won't matter.

The problem is that .com addresses are not owned by the registrars just managed by them. If a company wants to dispute it they go to the body above the registrar (I cant remember what it is called) show trademark infringement and several weeks/months later it is transferred to them no fee.

I believe you are referring to ICANN?

I guess registering the domain and hosting offshore would slow them down at least. Slowing them down even a month could mean an extra 10k in my pocket.

After some more research I've found Domain Name | Internet Domain Registration | Register Domain Names is good for offshore domain registrar, and Anonymous Hosting and Anonymous Domain names is good for offshore anonymous hosting. What do you guys think?

No. U.S. controlled TLDs (com, net, org, etc) will all be removed by ICANN directly. It doesn't matter who you register it with, the takedown process is the same for all registrars and the time is the same.

Read up on how to takedown domains. There's a howto manual right here: http://blog.icann.org/2012/03/thought-paper-on-domain-seizures-and-takedowns
