I have a website that gets decent traffic, but I haven't found an easy way to collect emails and have them stored. Are there any easy/free (hopefully) ways to do this that I just have not found? Unfortunately I am a coding noob so would not be able to write my own script for it.

If dealing with scripts makes you break out into a rash, then probably your best bet is one of the industry standard options like aweber or getresponse. There are others too if you're prepared to research - stay away from the free ones as nothing screams "STUPID AMATEUR VILLAGER" quite as much as a freeautobot mailing.
