So my girlfriend pointed the fact out to me that I eat like the same five things all the time (chili, chicken/vegetables, pizza/pasta, salad, sandwiches)... I never really thought about it much, but I guess she's right. I likes what I likes.

Anyway, she's forcing me to buy "new" food tomorrow, so give me some ideas. What are some of your favorite (easy) meals to make? I normally try to get things that are easy and small. For the most part I'm the only one who eats what I cook, and I hate leftovers. And healthy is good.

Tuna Noodle Casserole, there's a few ways you can make it. A few people bake it but I just throw it together in a pot:


  • Half a pound (when raw) noodles. They can be bow tie, penne, or whatever you like.
  • 1-2 cans of tuna, depending on your fondness of tuna.
  • 1 can of cream of mushroom or cream of chicken (I use Campbell's variety) with no (or very little) water added. They both taste similar, I prefer the cream of mushroom.
  • 1 can of peas. Yes those small green round things.
  • Optional: French fried onions (French's variety).
  • Scale to taste.
This is one of my favorite dishes, as it's simple, tasty, and scalable / changeable. It re-heats pretty good too. Play with it a little bit and you'll have a home run for yourself and kids.

lol... I totally forgot to mention this in my first post. I've eaten this like once a week since I was 5. One of my favorites. I add rigged potato chips to the top.
 
My mom use to call this moosh mush:


  • 1/2-1lb of pasta (when dry). Preferably penne or macaroni
  • 1lb of ground beef (cooked).
  • 1-2 cans of Campbell's tomato soup, typically with at least a little water. I usually go about half.
  • 1 can of corn.
Another tasty, scalable, simple, and fast crowd pleaser.
 
MISC TIPS

Add a bullion cube and a dash of garlic powder to any gravy mix to improve flavor

When browning meat add garlic powder, garlic pepper, salt (or bullion cube), and parsley for flavor

Add a little garlic, Italian seasoning blend, oregano, diced tomatoes to any ready made spaghetti sauce mix. To make it thick add some tomato paste

Brown meat with diced fresh onion

Add sliced sauteed mushrooms and diced onions to cooked diced chicken breast and ready made Alfredo sauce

Add sauteed diced onion and green peppers to meat for hamburger helper

After spreading on butter/margarine and garlic on bread for garlic bread, sprinkle parsley and Parmesan cheese then broil

Add a teaspoon of vanilla to box cake mix ingredients
 
Fish. Fish Sandwiches. Fish Sticks. Fish with Salad. Fish and Kool-aid.

Chicken Quesadillas << soft tortilla, cover half in refried beans, a layer of sliced chicken, olive slices, diced tomato, generous portion of cheese, fold the other half over the top and grill both sides, add salsa, sour cream and guacamole

Guacamole << the classic recipe from the Avocado growers of California site

Curry << chicken or lamb Vindaloo, Madras, Jalfrezi or other flavor with onion, carrot, potato and butternut squash chunks in it, over rice. Pataks curry pastes work well for this mixed with some stewed tomatoes, extra chilies, garlic... liquefy the sauce ingredients in a blender and stew your browned meat in it until nearly falling apart and add your veg until tender. You can add plain yogurt or coconut milk just before serving if you like it creamy.

Samosas << with mango chutney

Thai Basil Chicken << chicken, green beans, onion, mushrooms, chilies, lots of basil, fish and oyster sauce, over rice

Stir fried chicken, beef, pork, or seafood with whatever combo of veggies you like over Amoy noodles or rice, with oyster sauce or black bean sauce.

BBQ ribs, steak, chicken, fish, potatoes, red pepper, zucchini, and anythign else that can be cooked on a grill or rotisserie

Large platter salad with tomato, cucumber, shredded carrot, almond slivers, grated cheese, can of tuna or sliced chicken breast

or

cold baby potatoes, snow peas

or

goat's cheese, strawberries, walnuts, etc.

Pan fried salmon with a sprinkle of your favorite herbs, a side of herb garlic or spinach ricotta tortellini tossed in a little olive oil and Parmesan, and a small side salad

I can go on and on all day like this.
 
Start out with some Kettle One vodka martinis and a round of bruschetta on some French baguette bread with fresh tomatoes, basil, garlic and real olive oil. Grilled tuna steak with a healthy spoonful of wasabi mayo on top with sprouts for garnish. Grilled asparagus in olive oil and some garlic mashed red potatoes. Bottle of Benzinger Fume Blanc.

Except that it's shoulder. But it's almost impossible to beat the flavor of a nicely smoked boston butt. Last one I did smoked for 16 hours and you barely had to chew it it was so tender.

For me it's ribeye + salt (kosher) + pepper (penzeys blend) + grill. Substitute ribeye with salmon for something a little more heart healthy.

Tonight doing ravioli with homemade pasta sauce and steamed green beans.
