Depends on where you do it and how you do it. If you register a business online, through say the Division of Corporations in your home state, it will usually be registered within the first 24 to 48 hours. Of course, you have to file all of the appropriate forms, paperwork, etc...such as your articles of incorporation, but this is usually part of the registration process. If you fill out the forms and send them in via mail, then you have to deal with all the lazy government people that sit around all day who will never process your paperwork, which will obviously take much longer.

I'm in California, im hearing a bunch of different time frames

usually once you file you are good. For sole proprietorship, I believe you can use the name once some legal entity, like a bank, associates with. it's been awhile since i've done this tho, so i mayb fos . . .

in california, it's really quick. basically, it was send in the form off my town's webpage. publish 3 weeks of ads in the local newspaper and about 4 days later, a letter showed up that you need to open a business checking account. It cost about $110 after everything was done.

If you are just securing a name for a business, then meep is correct. One other aspect is that the county will try to collect taxes from you! Keep that in mind. Also whatever phone number you put on the application will be called by a bunch of pencil salesmen that request the data for new business filings.

If you are going full blown as a corporation, California wants 800 dollars a year for the privilege. Some states have no fee.

I do not recommend legal zoom. I had many problems with them and they do not deliver what they promise. If you go corporation you need to go the lawyer route.
