I don't know much about copyright law, service marks, etc. and curious what you guys think. If I launched an advertising related service using the name/domain ***sense.com could/would Google hassle me about it? It wouldn't compete with AdSense but it would be an advertising platform and I'm wondering if that's enough for them to be able to cause me problems if they wanted to, and maybe I should use a different name ...

It's only trademark infringement if it creates customer confusion. Unless it is similar enough to the name adsense or the website copys their design, then it should be okay.
Although that doesn't mean Google can't have their lawyers draft a cease and decease letter anyway telling you to shut down or they will sue. Even if you can win in court, often times the massive legal fees aren't worth it. But I doubt Google will do that.
