i7-2600k or i7-3770k

I always hear there is no point in getting an i7 unless you are doing video editing / something cpu intensive.

+1 for buildaPC. Put together a list of hardware and make a post detailing what you plan on doing with the computer, they'll go over it and tell you what you don't need or what you should upgrade. Even if you know what you're doing and don't need help, they can sometimes point out an alternative part that's on sale.
I don't know, I got an i7 in my laptop, and definitely wouldn't want anything lower. I don't know, maybe mine sucks though. I have a "Intel Core i7-2630QM CPU @ 2.00ghz 2001Mhz, 4 Core, 8 Logical Processors".
I have no idea what that means, but I do see the "i7" in there. Takes me about 5 mins to buy a new computer, so I don't know about the specs. My laptop is decent, but nothing to rave over. No complaints though, and everything loads fast. Definitely wouldn't want to go lower than I have though.
The 3770k/Ivy Bridge is supposed to be faster with the default settings, but I have read that the 2600k/Sandy Bridge will overclock better and run cooler. So you could possibly get better performance from a 2600k, if you are into overclocking at all.
Hell no, ignore those neckbeards at /r/buildapc. It's such a ridiculous circle jerk on there.
With those two options, go with the 3770 but only if you're rendering, encoding, etc and not planning to overclock. If you're using it for typical shit and gaming, go with i5 to save a nice chunk.
I've read that before. I'm not an overclocker and my gaming has dropped to almost nil.
Basically, I plan on running the stuff in Adobe CS6 (Dreamweaver, Fireworks, Photoshop) and the MS Office stuff (mostly Excel).
But...
I like overkill. Just in case.

Massive overkill.
The reason why I ask though, is the frugal side of me says "Do you really need massive overkill?" and the answer, of course, is "No".
So, I'm trying to decide what I *have* to have (really really want) and what can be trimmed.
One thing that I HAVE to have is the SSD. 16gb memory is a must have also. Everything else is in the "want" category.
Seriously, just go for it man. There will be no regrets once you have it built and running. Any overkill now just amounts to a longer life before you need to upgrade next time.

NOCTUA Fan NF-P12 PWM x4
I had also ordered the Noctua NH-D14 SE2011 but it didn't fit over the massive ram heatsinks properly, so I went with the Xigmatek Dark Knight cooler with Noctua fans added.
It's also got 2 x 1tb drives in it that I already had in my last machine in RAID for storage.
Bios is set to XMP. Quad channel memory is running at a stable 2400mhz. CPU running smoothly at 3.8ghz. So far it hasn't choked on anything I've thrown at it except it ran out of memory once when I had just about every Adobe application open along with all the other usual suspect, 2 or 3 browsers, FTP, email, text editor, etc. because I have my paging file turned off.
BF3 and Guild Wars 2 are pretty sweet looking running everything maxed out at 60-100fps. Unfortunately I haven't got time to play games for a couple of weeks

Then spend the extra on a larger SSD. Trust me, the SSD is going to make that shit so fast. I just put one in my laptop and it's an unbelievable difference.
