Is there some online service or other way to see what my pages will look like in Internet Explorer? I'm currently on a Mac and hate firing up a PC to do this.

If you have time to wait, you can try Check Browser Compatibility, Cross Platform Browser Test - Browsershots
just download a copy of tinyxp (torrent it) and install it into a virtualbox VM. you can have multiple ones, each with a different version of IE in it. They boot in less than 5 seconds.
Adobe also has a web app that helps you test your site in multiple browsers. http://browserlab.adobe.com
