if they are writing stuff down on paper, they are probably writing down what you are ordering. then they charge you about 30% more. at the end of the night they may just ring up all the orders and put the money for it in, keeping the extra 30%.
theres this fat guy at my nearest gas station that does that all the fuckin time. It's really annoying because he's slow and terrible at mental math so everytime you pay he does a no sale on the register then takes out the calculator and piece of paper and writes down the purchase totals then adds it up to take your money then leaves the register open so he can take it back out the moment you leave. Its obnoxious so just to fuck with him immediately after he's done I always ask for a receipt then he does this hilarious sigh/oink noise and closes the register and rings me up like normal.
To openly demand cash from the customers is ballsy as hell. I'm not one to ever nark but when they make you go far out of your way just so they can conveniently steal thats just begging for a call to corporate.

I'm with Eli on this, to demand cash and no cc's is pretty stupid. I remember some friends in high school who did this at their TB job, but on a much lower scale. They wouldn't even over charge people. What they did is just not ring up peoples drinks, and just mentally add cost of the drink to the order total, charging people for their food like normal and pocketing the payment for the drinks.
They bragged about making $75+ a night (which is really good when getting paid $6 an hour) and never got caught during their time at the job.

I say you only have two real choices here:
1. Turn them into the McDonald's Gods for their $100 reward so you can buy more McDonalds
2. Blackmail them into giving you as much free nightly food you want in exchange for your silence.
Either way you benefit, and these chicks will get caught eventually, so why shouldn't you benefit from it when you have so awesomely figured this out.

in canada, businesses that charge GST must include their GST number on the receipt or at least if you ask for it. there was some bitch posting ads in the newspaper doing women's nails out of her house. cash only and was charging "gst" on top of her rate
