Few Thoughts..
1) Don't go for the "Free" Niche. Go Paid and pay affiliates. DATING offers however saturated is evergreen, and there will always be paying members. Of course this is difficult. You need tons of quality members before you get paying members, but then if it was so easy everybody would be a millionaire
2) If it fails, you would still have a great site that if you use your site as a LANDER, you would get an awesome QS from Google..

Unless you have a truly amazing new idea, don't do it from scratch
There's lots of white label dating sites that allow you to make your own and keep a great percentage of the profits. Use them, it's easier.
You may also want to look into a "host and post" that you should be able to find in the bigger networks. That will allow you to control the creatives and targeting, increase conversions and keep reg info.
