I have a Basic Dedicated Server Plan from Hostgator and it goes down everyday. I keep running out of memory and other issues. Do you think a
a Ember Server Plan at 100tb.com would be better?

What type of traffic are you getting? What's your OS? What code are your pages loading (javascript, flash, php, asp, etc.)? It sounds like more of an server or application issue, which switching to another server may not fix the problem.

Since you are hosting Dedicated server, it should not be downtime as it may interrupt your business.
you can go with some good hosting companies who can provide server uptime of 99.9% and 24*7 chat and email support.

With 2 gigs of ram on a managed dedicated server, you must have something running on the server that is poorly written, I doubt it's hostgator's fault.
