Casting on instructions are always way too complicated. Just tie the first one like a knot (not too tight so that you can get the other needle in) and then for the next one loop the yarn, twist it over towards yourself and put it onto the needle. Pull the yarn firm to pick up the slack and repeat until you have all the stitches you need. Ultra-easy project that looks amazing: cast on 31 stitches. Knit one row as usual, then for the next one knit the first stitch, drop the next two, knit the next one, drop the next two and so on until you reach the last stitch (knit as normal). Stretch the knitting sideways to remove any slack, then for the next row knit as usual but loop the yarn 3 times for each stitch EXCEPT the last stitch, which you knit with just one loop. Flip over and repeat the stitch one drop two thing again, and so on. Always end with a normal stitch as this will keep the thing together. It'll take about 2 hours to make a scarf that'll make people go all 'omg that's awesome, can you teach me? No wait, can you make me one?'
