It's not really a "cool" app per say, but Advanced Task Killer for Android is awesome. It literally doubles the battery life of my phone.

Ditto, though there are naysayers who would claim it does nothing useful, that the "OS is supposed to manage that efficiently". But kinda hard to let the OS do it when every developer out there seems to think their app needs to be loaded upon startup.

On my handroid my most 'useful' apps are

PDANet : Was using Azilink, but pdanet does a very good job of tethering my phone's 3G connection to my mac (or windows, or linux), and seems to have the lease amount of performance lost compared to other tethering apps. Also you don't need to be rooted to use PDANet.

SlideScreen Pro : Probably the slickest looking 'info screen' for the android, makes it easy for me to see new emails, sms, phone calls, facebook, tweets, etc at a glance.
 
I hate to admit it but: Google Sync. For contacts mostly, but also for the calendar. blackberry <-> thunderbird <-> browser. Can't live without it.

yeah I use that a lot. plus xscope browser, newsrob, phonemypc, sugarsync and google voice.
 
Android-

Meebo IM (gtalk, AIM, etc all in one)
Pandora (streaming music)
PDANet (phone->computer tethering)
Droid Light (turns your droid into a flashlight)
Robo Defense (addicting game)

Also I like creating shortcuts. For example, I have a "Go Home" shortcut which will automatically navigate directions to my house from wherever I am.
 
had to resurrect this thread for this app. tried it today for the first time.

if you have a droid get this shit, it's way better than the regular keyboard
