How do you pay Indian workers - Payoneer?

I use Odesk and Rentacoder for big projects. The escrow feature is a must if you don't want the guy to walk the fuck away.

I found that if you go one on one and paypal 'anything' to him, you're 1000x more likely not to 1) get a quality project, and 2) get anything at all if he decides your requirements are to his taste.

Paypal, but never pay for everything upfront. I'ev had good experiences so far with giving them like 10-20% down, and the rest after work is complete. But I have heard of some horror stories.
