these artists do today because they're too lazy to create their own, don't play an instrument, and/or the record company is too cheap to hire someone to put together original music for that artist.

Sampling tends to cost more nowadays than using musicians does. That's one reason why producers like Dr. Dre now don't just use drum machines and samples, but also use studio musicians.

The Beastie Boys play drums, bass and guitar, but choose to mostly use samples, or at least they used to. I wouldn't say it is because they are lazy, but it has to do with why sampling became popular in the first place. It's a way to come up with cool sounding stuff by combining sounds from various styles and eras.

Zeppelin took something and built off of it, changed it, and made it their own.
The same can be said for lots of rap that uses samples. Hit radio songs might not be very creative in their sampling, but lots of other stuff is, such as older Public Enemy for example.
