Marcellus Wallace's soul. Vince and Jules were angels whose mission it was to recover it after Marcellus Wallace sold it to the devil. In some mythology, can't remember which, the soul exits the body from the base of the brainstem/top of the spine, which is why Marcellus Wallace has a band-aid on that exact spot, which is shown for a couple seconds when Jules and Vince meet Marcellus in a back room after Mrs. Wallace's OD. The soul is also said to glow gold, which is what you see in the diner when Jules pops the case open to show the robbers.

Jules lives because he recognizes the divine intervention that saves them in the apartment when striking down with great vengeance and furious anger those who attempt to spirit Marcellus Wallace's soul away. Vince does not live because he does not recognize the divine intervention.
