Thinking of doing this, just encrypted my entire HDD with TrueCrypt, I used AES-TwoFish-Serpent encryption, and the hash whatever thing was the last option(Don't remember the name) and used a 20 Digit Password... That should be pretty solid right ?

You should be fine, basically unbreakable. just remember that the more layers you added the more of a performance hit you'll take
Yes and no. Depends on how much you trust the people who are hosting it.
My data isn't encrypted in the cloud, I don't really see a point. My main (and really only) objective is to protect the data in the case of a lost/stolen laptop.
I use TrueCrypt partial disk encryption, and I like the idea of full-disk, but it seems like there is a downside with it too - unless I'm wrong about this. With an encrypted disk container that I can mount and unmount easily, I can unmount the thing while leaving my computer on, if I'm just leaving my hotel for a few minutes for example. With full disk encryption, wouldn't you need to turn the computer off entirely in order to have any of the data secured?
Yes the laptop would need to be off otherwise its not secure (in fact it would need to be off for at least 1 minute before it could be considered truly secure, but I digress). There are positives and negatives to both.
Partial is easier but not as secure (in the sense that any data on the drive out side of the TrueCrype volume is not encrypted) while full is more secure but less flexible (I wouldn't want to back it up to the cloud for instance).
