The BBQ / Grilling Thread

I love BBQ and I love cooking in general.

My all time favourite on the grill is just plain grilled mussels (no butter no garlic) and down it with beer!
 


the rumor is for a good steak all you need is

sea salt, black pepper, EVOO and a hot grill

I have not known BBQ, let alone ribs, until I moved to Chattanooga TN, and I have fallen in love. The shit they call BBQ in Washington State is NOTHING like the BBQ down here. Even the big chain restarunts here serve better BBQ then in WA State (though the asian here sucks ass comparatively). Sticky Fingers totally FTW! I could punch myself in the face, the ribs are so awesome!
 
We're doing a 12lb brisket over night on the Traeger smoker.

We did smoked turkey last weekend. Ran a couple racks of ribs the weekend before, here they are:

The best salmon you will ever have (unless you like sushi grade raw, which I do as well....)

Get a full salmon filet - preferably wild caught salmon. This should set you back $50 or so but it will feed 4 or 5 people.

1 cup brown sugar
1/2 cup salt
1 cup Meyer's dark rum

Put the salmon in a baking pan, skin side up, and mariniate in the dark rum for 20 minutes.

Remove and drain the rum. Or drink it - odds are you won't get food poisoning at this point.

Mix the brown sugar and salt together - cover the salmon in the mixture. Put it in the fridge for 8 hours or so.

Remove and rinse.

Grill this using indirect heat for about 1/2 hour - use smoker chips, etc.

It is freakin' awesome.
 
I love BBQ some BIG FUCKING RIBS AND STEAKS in the back yard. The kind of big that clogs your arteries. None of this soft, fruity 21 oz steaks shit at the restaurant.

t-bone
chicken quarters

I love fuckin cooking shit on the pit.

Get a can of baked beans and open that shit and set it on the grill. Corn in the shuck, baked fucking potatoes on the grill or just throw those bitch's in the coals.

Damn, I'm hungry.
 
I grill out about 2-3 times a week, even in the winter.

I need a new smoker though, my grill is having to do all the work atm.

any recommendations on smoker?
 
I was just in home depot btw and they had a bunch of nice smokers on clearance. It's winter here so that's probably why - no damn clue if all of them have them or not.

Almost had to buy a new one when I saw them, but none were as big as the one i've got now.

We also live near a pretty decent sized Amish community and head over to their farmers market for most of our meat. Usually killed and butchered the day before you buy it - hard to fuck up a good steak when it's that fresh.

They also sell bacon that's about 4 inches wide - makes wrapping stuff in bacon awesome.

damn.. you know what, we should post some of our fav rubs and marinaides like sharksfan did for the salmon.

I give you one I use for pork chops:

4 teaspoons salt
4 teaspoons ground coffee
4 teaspoons chili powder
2 tablespoons dark brown sugar
1/2 teaspoon freshly ground pepper
1/2 teaspoons onion powder
1/2 teaspoon garlic powder
1/2 teaspoon cayenne
1/4 teaspoon ground coriander
1/4 teaspoon turmeric

Combine all the ingredients for the rub.

Rub both sides of the pork chops with the coffee rub.

Grill for 5 to 7 minute on each side
