Coconut Oil is the bomb. It is very high in MCTs, smells incredible, and tastes even better. The saturated fats are STABLE (ie saturated) bonds that do not degrade or smoke out like your olive oil. They are necessary for all vital organs to function properly.
I make stuff like stir fry and sweet potatoes in the pan with coconut oil. I hear you can make popcorn with it too, but I don't eat corn.
If you ARE going to cook with olive oil, go with non-virgin. It'll have a higher smoke point. The last thing you want are polyunsatuated fats oxidizing and bonding with all sorts of shit in your body.
On the MCT note, I'm getting into MCT oil in my pre workout protein shakes. This stuff is pure energy. You shouldn't cook with this due to the lower smoke point though:

I'm stoked that saturated fats are coming back "in style". I don't eat them like crazy like many paleo dieters do (I try to keep meat pretty lean this year and it's working well), but it's definitely part of my everyday diet and should be part of yours.
Oh, and since you're a lady, you can even use it for your hair and skin since you probably like that stuff.
