It can be whatever you want it to be. A pure 1:1 backup is possible but it's not out of the realm of possibility to have say a 8-24 hour slave which only holds data from that long ago. This is of course to recover from total server failure or from botched database administration. I merely say it's an option, you have to do your own due diligence.
yea a bit of a delay / lag would be acceptable with downtime...That would not be an issue at all.. just cannot afford to lose an entire day from downtime.. If I had saw 4 hours of downtime Sure I would be a little annoyed but to loose a whole day I could not afford again...... it not only means I have ppl sitting around getting paid to litteraly do nothing but it also means I have adwords down, I have pissed off customers etc.. so it is a massive headache...
When searching for a new provider make a few calls, speak to them about your biz. Ask questions about support and backups, etc. You should consider a vps plan as dedicated server sounds a bit overkill for your needs.
